Mussel Chowder

So don't be intimidated by chowder. I made this for 95 people for my first time ever!

- A lot of Mussels
- 7 potatoes peeled
- 2 cups Flour
- 2 cups Butter
- 2 1/2 cups of the boiled mussel water
- 4 Liters Milk
- Cracked pepper
- Salt

Boil the mussels in hot water until most of them open. Peel out the meat taking the hair out of the meat as well. Any mussels that don't open, throw away! In a massive pot put the butter in until it is liquid then stir in the flour. Pour in the water of boiled mussels and stir continuously. Pour in the milk a little at a time, stir until the sauce becomes thick. Once all the milk is poured in put in the mussels and potatoes. Let it simmer for 2 hours. Then add pepper and salt to taste!

Ah-Mazing Cheesecake!

1 pkg Graham Crackers
1/4 cup Margarine
4 T Sugar

2 - 8oz Packages Cream Cheese
1/4 cup Sugar
3 T Vanilla

Crumble the Graham Crackers until they are fine, then add melted margarine and sugar. Press into pie pan, and put in freezer for 15 min. Place one package of Cream Cheese in Microwave for 30 seconds. Take out and mix in the other package, sugar and vanilla or any other flavoring. Mix until smooth. Spread evenly over crust. Place in refrigerator for 2 hours or place in Freezer for 1 hour. Enjoy!!!!

I was really craving some cheesecake and so were the people around me so I decided to make my own, and make up my own recipe, it's really good!!!!

The Ultimate Meatloaf

2 1/2 lb Ground Beef
1lb Bacon or Ham
3 cups BBQ Sauce
2 Eggs
2 cups Milk
1 Onion
4 T Seasoning

12 Potatoes
2 cups Milk
1/2 oz package Cream Cheese
1 stick Butter

First start by peeling the potatoes, chopping into small pieces and putting in a pot covered with water on the stove. Wait for them to boil, stirring occasionally. When the potatoes fall apart, drain and mash. While mashing put in 2 cups milk, 1 stick butter, and cream cheese. Mash until creamy, you can add any type of seasoning, but Season salt does wonders.
Mix the ground beef with the 3 eggs, Onion, 2 cups milk and 4 T seasoning. In a 9x13 pan press half of the mixture on the bottom. The other half set aside for now. On top of the mixture in the pan place the mashed potatoes. Now the other half of the meat, press on a wax piece of paper the same length and width of the 9x13 pan. Then place on top of the mashed potatoes, pressing the two meats together. On the top place the Bacon or Ham. Then spread the BBQ Sauce over the top of that.
Bake at 350 for 45min-1hour.
It is a very good meal for when you've been outside working all day or on a cold day.

Vegetable Soup

1 Onion
2 cups Sweet Potato (Kumara)
5 cups Potato
2 Cauliflower
5 Carrot
4 T Vegetable Stock Powder
Water

Cut potato & sweet potato into little chunks. To add extra flavor I bake the potato & sweet potato until they are crispy. Chop Onion, Carrot, Cauliflower. Put Onion in the pot with a little oil. Fry for 2 minutes stirring continuously. Add the Vegetable Stock and continue to stir for another minute. Add the potatoes stirring. Add water until the pot is ½ full. Throw in the cauliflower & carrot. Stir, let simmer for 45 min.
Yield: 30 servings

This is such an amazing soup to make especially if you have leftover veggies from the night before, which is what happened to me. With not a lot of people around I haven't gotten my ratio right from 60 dropping to 30. Anyways Enjoy....

Monster Bars



1 ½ lbs. shortening (3 cups)
3 cups peanut butter
6 eggs
2 cups brown sugar
2 cups white sugar
½ T vanilla
1 T+ 1t baking soda
9 cups raw oats
2 cups chocolate chips
1lb candy m&ms (2cups)

Soften shortening and peanut butter in microwave. Add ingredients together in order given. Press into greased 9x13 pans and bake 20 min at 350. The middle of the pan will still wobble when you remove from the oven, but will firm up as it cools. Don’t overcook!

Backpacker Cookies:

1 ½ c margarine
4 c brown sugar
4 eggs
¾ c milk
4t vanilla
6 c flour
2t baking soda
1t salt
10 c granola
5 c carob chips (or chocolate chips)
5 c raisins
5 c peanuts

Preheat oven to 350. In large bowl, cream margarine and brown sugar until light and fluffy. Blend in eggs, milk and vanilla. Add flour, baking soda, and salt. Stir in granola, chips, raisins and peanuts. Using an ice cream scoop, drop portions on a greased cookie sheet, bake for 8-10 min. baking time may vary according to size of cookies. Allow to cool on cookie sheet. Makes 4 -6 dozen

These cookies are best for trips, or when you have a ton of people coming over! So many and so good!!!
